The British cookbook author and television personality Mary Berry, who gained international recognition as a judge on The Great British Bake Off, has a Tuscan-style chicken recipe designed to serve six.
According to the Daily Express, the dish is described as one of Berry’s favourites when she wants an easy supper. The newspaper reports that it can be ready in under an hour, while any leftovers can be frozen for another meal.
The recipe uses chicken thighs rather than breast meat and combines them with vegetables, tomatoes and a cream-based sauce.
Most of the cooking is done in the same pan, making it suitable for a family dinner without an especially complicated preparation process.
What goes into the sauce
The chicken is seasoned with paprika, salt and pepper and given a light coating of flour before cooking. Onion, red pepper and garlic provide the vegetable base.
For the sauce, the recipe calls for tomato puree, sun-blushed tomatoes, white wine, chicken stock and double cream. Spinach is added near the end, followed by grated Parmesan.
The sun-blushed tomatoes distinguish the dish from some other creamy chicken recipes. There is also some flexibility when it comes to serving. The paper notes that potatoes, rice or pasta can all accompany the chicken, allowing the same main dish to work with several different sides.
How the chicken cooks
Preparation starts with browning the coated chicken thighs in oil. Once they have developed colour, they are removed from the pan while the onion and red pepper soften, with garlic added shortly afterwards.
Tomato puree and wine are then introduced, followed by the chicken stock. The browned thighs return to the pan and continue cooking in the liquid until tender.
Cream and spinach are stirred through towards the end of the process. Once the spinach has wilted, Parmesan is added before serving.
The result is a substantial chicken dinner that combines browned meat with vegetables and a creamy sauce, while still keeping the overall method relatively manageable for an everyday supper.
