A great cookie doesn’t just taste good — it feels right. It crackles slightly at the edges, then gives way to a warm, soft center. It’s the kind of bite that comforts, delights, and takes you right back to simpler times.

The best part? You don’t need to be a pro to bake them.

Just a little patience and one smart trick.

Here’s how to make cookies that are crispy on the outside and deliciously soft inside, every time.

Ingredients (Makes About 10–12 Cookies)

  • 75 g butter, lightly browned
  • 125 g sugar
  • 1 egg
  • 125 g flour (type 405)
  • 1 tsp baking powder
  • 100 g dark chocolate, chopped
  • A handful of hazelnuts, chopped and lightly toasted
  • A pinch of sea salt

The Trick: Brown Butter & Chill Time

  1. Brown the Butter
Melt the butter in a pan over medium heat until it turns golden and smells nutty. Cool it in the fridge for about 5 minutes — this adds depth to the flavor without making the dough greasy.
  2. Whisk Sugar & Egg
In a large bowl, whisk the sugar and egg until pale and fluffy. This builds the base for a chewy, tender texture.
  3. Add Dry Ingredients
Sift in the flour and baking powder, then gently fold to combine. Don’t overmix — the dough should just come together.
  4. Add the Good Stuff
Fold in the chopped chocolate and toasted hazelnuts, plus a pinch of sea salt to balance the sweetness.
  5. Chill the Dough
Cover and refrigerate the dough for at least 30 minutes. Overnight is even better. This prevents spreading and gives you that soft middle with crisp edges.

Baking Instructions

  • Preheat oven to 200°C (top/bottom heat).
  • Shape the dough into small balls and space them well apart on a lined baking sheet.
  • Bake for 10–12 minutes, or until the edges are golden brown but the centers are still soft.
  • Cool on a wire rack — this keeps the bottoms dry and helps the centers stay moist.

With browned butter for depth, chilled dough for control, and just the right bake time, you’ll get cookies that are crispy on the outside, tender in the middle, and downright irresistible.

Simple ingredients, a clever method — and pure, cozy joy in every bite.
