Ingredients:

For the Carrot Cake:

  • 400g carrots

  • Zest and juice of 1 orange

  • Zest and juice of 1 lemon

  • 400g ground almonds

  • 1 large teaspoon baking powder

  • 100g corn starch

  • ½ teaspoon salt

  • 5 eggs (whites and yolks separated)

  • 170g sugar

  • 50ml soft butter

For the Frosting:

  • 280ml cream (32% fat)

  • 280g cream cheese

  • 2 teaspoons cream thickener

  • 70g powdered sugar

  • Zest of 1 lemon

  • Zest of 1 orange

Decoration:

  • Carrot

  • Carrot greens (edible)

  • Pistachios

Preparation:

  1. Preheat the oven to 175°C (347°F) and line a tray or baking tin with parchment paper.

  2. Grate the carrots and zest the citrus fruits, then mix them together.

  3. In a large bowl, combine the cornstarch and baking powder, then add the ground almonds.

  4. Beat the egg whites with a pinch of salt until foamy and set aside in the fridge.

  5. In a separate bowl, whisk the egg yolks with sugar until they form a white foam.

  6. Gradually incorporate the carrot and almond mixture into the egg yolks, then mix in the oil and juice.

  7. Gently fold in the beaten egg whites in two parts, mixing carefully with a spatula.

  8. Transfer the batter into the prepared mold or baking sheet, level it, and bake for about 45 minutes.

  9. For the frosting, whip the cream until stiff, then blend the cream cheese with the lemon and orange zest until smooth.
