Most people throw away the peel when they peel a mandarin. But actually, you're discarding important nutrients right into the trash can. After reading this, you might start saving your peels, because it's actually possible to use them to make the most heavenly Mandarin Marmalade.

Ingredients and Method for Mandarin Marmalade:

You will need:

  • 1.5 kg of Mandarins

  • 1.5 liters of water

  • 1 tsp of Baking Soda

  • 700 grams of sugar

  • Juice from 1 lemon

Method:

  1. Thoroughly wash the mandarins.

  2. Cut the top part of the mandarins where the stem is and turn them upside down.

  3. Use a knife to score, peel, and separate the peel from the flesh.

  4. In a bowl with the peels, add 1.5 liters of water and a teaspoon of baking soda. Leave it for 30 minutes!

  5. Clean the fibers from the flesh of the mandarins.

  6. Rinse the peels with plenty of water, put them in a pot, and add water until they are covered.

  7. Boil for 5 minutes with the lid closed, stirring occasionally.

  8. Drain the water from the peels and boil them again for another 5 minutes with clean water.

  9. Repeat the boiling process for another 5 minutes.

  10. Add the peels back to the pot, add half the sugar, the mandarins, the remaining sugar, and leave for 20 minutes.

  11. Add a glass of water and the lemon juice and boil with the lid open for 20-25 minutes.

  12. Stir and skim if necessary.

  13. Turn off the heat and blend well with a hand blender until smooth.

  14. Turn on the heat and cook on low to medium heat for another 4-5 minutes.

  15. Distribute the hot marmalade into sterilized jars, close the lids tightly, and turn upside down.

The marmalade is now ready for you and your children to enjoy!
