Coffee Overnight Oats Recipe
Makes 1 serving
Perfect for those who want to hit snooze one more time without skipping breakfast.
Ingredients:
- 75 g fine rolled oats
- 100 ml cold brewed coffee
- 100 ml plant-based milk (e.g. oat, almond, or soy)
- Pulp of ½ vanilla pod
- 1 tsp ground cinnamon
- 1 tbsp nut butter (e.g. almond or cashew)
- 50 g fresh strawberries
- 25 g chopped nuts (e.g. almonds or hazelnuts)
- 1–2 strawberries for garnish
Instructions:
The Night Before:
- In a bowl, combine the oats, vanilla pulp, cinnamon, cold coffee, and plant-based milk.
- Stir well, cover, and refrigerate overnight. This allows the oats to absorb the liquid and soften.
In the Morning:
- Rinse and chop half the strawberries, then blend into a smooth puree. Dice the remaining strawberries into small cubes (about 5 mm) and mix them with the puree.
- Remove the oats from the fridge and stir to loosen if needed.
- Spoon into a bowl and top with nut butter, the strawberry mixture, and chopped nuts. Garnish with halved strawberries.
In just minutes, you’ll have a fruity, creamy, and lightly caffeinated breakfast—perfect for early risers and late starters alike.
