But a warm, fluffy apple–cinnamon roll cake that comes together in just 10 minutes can save the day and make it look like you were ready all along.
Food creator Gian Sibilia shared a simple recipe that uses basic pantry staples and bakes while you tidy up.
What you’ll need
This quick cake relies on an easy batter and a lightly sweet apple filling. Most ingredients are the kind you already keep at home.

- 205 g spelt (or regular) flour
- 50 g sugar
- 15 g baking powder
- 190 g milk
- 60 g coconut oil
- Pinch of salt
Filling:
- 4 apples
- 40 g date powder (or maple syrup, date syrup, or honey)
- 5 g cinnamon
How to make it
Start by coring and roughly chopping the apples. Sauté them in a little coconut oil for 2–3 minutes. Add the date powder or syrup and cinnamon just before taking them off the heat, then set aside.
In a bowl, mix the dry ingredients for the dough. Add the milk and coconut oil, stirring until smooth. Fold in the warm apple mixture with a spatula.
Pour the batter into a parchment-lined pan and bake at 170°C / 340°F for about 35 minutes (top-and-bottom heat).
The cake tastes amazing straight from the oven with a scoop of vanilla ice cream. Once cooled, it’s great on its own or topped with powdered sugar or whipped cream.
