What You’ll Need

To make 5–6 mini waffles, you’ll need:

  • 40 g spelt flour (type 630)
  • 20 g protein powder (or replace with more flour)
  • 1 tbsp baking powder
  • 20 g stevia
  • 5 g vanilla flavor powder
  • 60 g unsweetened almond milk
  • 1 egg
  • 40 g skyr (or Greek yogurt as a substitute)

Easy Preparation

  1. Preheat your waffle iron.
  2. In a bowl, mix all the dry ingredients.
  3. Add the almond milk, egg, and skyr, and whisk until smooth.
  4. Lightly grease your waffle iron with spray oil.
  5. Pour in the batter — about two tablespoons per waffle.
  6. Cook until golden brown and enjoy!

In just minutes, you’ll have a batch of warm, pillowy waffles with a lightly sweet flavor thanks to stevia and vanilla.

The use of skyr, a protein-rich dairy product, adds both fluffiness and a subtle tang, making these waffles not just sugar-free but satisfying.
