Ingredients

- 2 red onions
- 800 g salmon fillet
- 200g corn
- 2 pk taco seasoning
- 2 pieces of lime
- 4 tablespoons olive oil
- 2 pk tortilla chips
- 4 cloves garlic
- 2 teaspoons salt
- 1 teaspoon pepper
- 4 avocados
- 4 dl sour cream
- 1 bunch coriander
- 400 g aged cheese

Prepare the topping

In a mixing bowl, combine finely chopped red onion, flaked salmon, sweetcorn, taco seasoning, lime juice, and a drizzle of olive oil. Stir until well mixed.
Assemble and bake

Spread tortilla chips evenly in an ovenproof dish. Spoon the salmon mixture over the top and finish with a generous layer of grated cheese.
Bake at 200°C for 10–15 minutes, or until the cheese is golden and bubbling.
Make guacamole

Mash the avocado in a small bowl and season with minced garlic, salt, and freshly ground pepper to taste.
Serve

Take the nachos out of the oven and top with dollops of sour cream, a spoonful of guacamole, and a sprinkle of fresh coriander.
Serve right away—ideally with good company and something cold to drink.
